1 pound lean ground beef (90% lean)
2 medium zucchinis, diced (about 2 cups)
1 medium yellow onion, finely chopped
3 cloves garlic, minced
1 tablespoon olive oil
1 teaspoon dried oregano
1/2 teaspoon ground black pepper
1/2 teaspoon salt
1/4 teaspoon crushed red pepper flakes
1/2 cup low sodium beef broth
1/4 cup grated Parmesan cheese
Heat the olive oil in a large skillet over medium heat.
Add the chopped onion and cook for 3-4 minutes until softened.
Add the minced garlic and cook for 1 minute until fragrant.
Add the ground beef to the skillet, breaking it up with a spatula. Cook for 6-7 minutes until browned and cooked through.
Drain any excess fat from the skillet.
Add the diced zucchini to the skillet and stir to combine with the beef mixture.
