Air Fryer Shrimp Burger

A delicious and healthy air fryer shrimp burger made with seasoned shrimp patties, served on a toasted bun with fresh lettuce, tomato, and a tangy mayo sauce.

1 pound raw shrimp, peeled and deveined
1/4 cup panko breadcrumbs
1 large egg
2 cloves garlic, minced
1 tablespoon fresh parsley, finely chopped
1 teaspoon Old Bay seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil
4 hamburger buns
4 leaves romaine lettuce
4 slices tomato
1/4 cup mayonnaise
1 teaspoon lemon juice

Instructions

Place the raw shrimp in a food processor and pulse until coarsely chopped but not pureed.
Transfer the chopped shrimp to a mixing bowl.
Add the panko breadcrumbs, egg, minced garlic, chopped parsley, Old Bay seasoning, salt, and black pepper to the bowl.
Mix all ingredients together until well combined.
Divide the mixture into 4 equal portions and shape each into a patty about 3 inches in diameter.
Preheat the air fryer to 375°F (190°C) for 3 minutes.
Brush each shrimp patty lightly with olive oil on both sides.
Place the patties in the air fryer basket in a single layer, making sure they do not touch.
Cook the patties in the air fryer at 375°F (190°C) for 8-10 minutes, flipping halfway through, until the shrimp burgers are golden brown and cooked through.
While the patties cook, mix the mayonnaise and lemon juice in a small bowl to make the tangy mayo sauce.
Toast the hamburger buns in the air fryer for 1-2 minutes until lightly browned.
Assemble the shrimp burgers by spreading the tangy mayo sauce on the bottom bun, then adding a lettuce leaf, a shrimp patty, a tomato slice, and the top bun.
Serve immediately.
