A deliciously cheesy and hearty casserole combining tender chicken, crunchy Doritos, and creamy nacho cheese sauce, perfect for a comforting family meal.
3 cups cooked chicken, shredded
1 (9.75 oz) bag Nacho Cheese Doritos, crushed
2 cups shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1 (10.5 oz) can condensed cream of chicken soup
1 cup sour cream
1/2 cup milk
1/2 cup diced green bell pepper
1/2 cup diced red bell pepper
1/4 cup diced onion
1 teaspoon garlic powder
1 teaspoon chili powder
1/2 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons unsalted butter, melted
2 green onions, sliced (for garnish)
Preheat the oven to 350°F (175°C).
In a large mixing bowl, combine the shredded chicken, cream of chicken soup, sour cream, milk, garlic powder, chili powder, ground cumin, salt, and black pepper. Mix well until fully combined.
Add the diced green bell pepper, red bell pepper, and onion to the chicken mixture. Stir to incorporate evenly.
Fold in 1 cup of shredded cheddar cheese and 1/2 cup of shredded Monterey Jack cheese into the mixture.
In a separate bowl, mix the crushed Nacho Cheese Doritos with the melted butter until the chips are evenly coated.
Lightly grease a 9×13 inch casserole dish. Spread half of the chicken mixture evenly in the dish.
Sprinkle half of the Dorito mixture over the chicken layer.
Spread the remaining chicken mixture over the Doritos layer.
Top the casserole with the remaining Doritos mixture.
Sprinkle the remaining 1 cup cheddar cheese and 1/2 cup Monterey Jack cheese evenly over the top.
Bake uncovered in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly and the casserole is heated through.
Remove from the oven and let the casserole rest for 5 minutes before serving.
Garnish with sliced green onions and serve warm.
