Ground Beef Zucchini Skillet

A quick and flavorful ground beef zucchini skillet that combines savory beef with tender zucchini and aromatic spices for a healthy and satisfying meal.

1 tablespoon olive oil
1 pound ground beef
1 medium yellow onion, diced
3 cloves garlic, minced
3 medium zucchinis, diced
1 medium red bell pepper, diced
1 teaspoon dried oregano
1 teaspoon ground cumin
1/2 teaspoon smoked paprika
1/4 teaspoon crushed red pepper flakes
Salt, to taste
Black pepper, to taste
1/2 cup shredded cheddar cheese
2 tablespoons chopped fresh parsley

Instructions

Heat olive oil in a large skillet over medium-high heat.
Add the ground beef to the skillet and cook, breaking it apart with a spoon, until browned and cooked through, about 6-8 minutes.
Add the diced onion and minced garlic to the skillet with the beef. Cook, stirring occasionally, until the onion is translucent, about 3 minutes.
Stir in the diced zucchinis and red bell pepper. Cook for 5-7 minutes, stirring occasionally, until the vegetables are tender but still slightly crisp.
Add the dried oregano, ground cumin, smoked paprika, crushed red pepper flakes, salt, and black pepper. Stir well to combine all the flavors.
Sprinkle the shredded cheddar cheese evenly over the skillet. Cover the skillet with a lid and cook for 2-3 minutes until the cheese is melted.
Remove from heat and garnish with chopped fresh parsley before serving.
