Tater Tot Casserole with Ground Beef and Frozen Veggies

A hearty and comforting tater tot casserole layered with seasoned ground beef, mixed frozen vegetables, and creamy cheese sauce, topped with crispy golden tater tots.

1 pound ground beef
1 small yellow onion, diced
2 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon dried thyme
1/2 teaspoon paprika
1 (10.5 ounce) can condensed cream of mushroom soup
1/2 cup milk
2 cups frozen mixed vegetables (carrots, peas, corn, green beans)
2 cups shredded sharp cheddar cheese
1 (32 ounce) bag frozen tater tots

Instructions

Preheat the oven to 375°F (190°C).
In a large skillet over medium-high heat, cook the ground beef, diced onion, and minced garlic until the beef is browned and the onion is softened, about 7-8 minutes. Drain excess fat.
Add salt, black pepper, dried thyme, and paprika to the beef mixture and stir to combine.
In a medium bowl, whisk together the condensed cream of mushroom soup and milk until smooth.
Add the frozen mixed vegetables to the skillet with the beef and stir to combine. Cook for 3-4 minutes until the vegetables begin to thaw.
Remove the skillet from heat and stir in the soup mixture and 1 cup of shredded cheddar cheese until evenly combined.
Transfer the beef and vegetable mixture to a 9×13 inch baking dish and spread evenly.
Sprinkle the remaining 1 cup of shredded cheddar cheese over the beef mixture.
Arrange the frozen tater tots in a single layer over the cheese to cover the entire surface.
Bake uncovered in the preheated oven for 35-40 minutes, or until the tater tots are golden brown and crispy and the casserole is bubbly.
Remove from the oven and let the casserole rest for 5 minutes before serving.
