2 pounds beef chuck roast, trimmed and cut into 2-inch pieces
1 packet (1 ounce) ranch dressing mix
1 cup beef broth
1 medium onion, sliced
3 cloves garlic, minced
1 tablespoon olive oil
1 teaspoon black pepper
1 teaspoon salt
1 teaspoon dried parsley
1/2 teaspoon dried thyme
Heat olive oil in a large skillet over medium-high heat.
Add beef pieces and brown on all sides, about 3-4 minutes per side.
Transfer browned beef to the crock pot.
In a small bowl, mix ranch dressing mix, black pepper, salt, dried parsley, and dried thyme.
Sprinkle the ranch seasoning mixture evenly over the beef in the crock pot.
Add sliced onion and minced garlic on top of the beef.
Pour beef broth over all ingredients in the crock pot.
