English Roast Beef in Slow Cooker

A traditional English roast beef cooked slowly in a crock pot to achieve tender, flavorful meat perfect for a comforting meal.

3 pounds beef chuck roast
2 teaspoons salt
1 teaspoon black pepper
2 tablespoons olive oil
4 cloves garlic, minced
1 large onion, sliced
4 medium carrots, peeled and cut into chunks
3 medium potatoes, peeled and cut into chunks
2 stalks celery, cut into chunks
1 cup beef broth
1 tablespoon Worcestershire sauce
2 sprigs fresh rosemary
2 sprigs fresh thyme

Instructions

Pat the beef chuck roast dry with paper towels.
Season the roast evenly with salt and black pepper on all sides.
Heat the olive oil in a large skillet over medium-high heat.
Sear the roast in the skillet for 3-4 minutes on each side until browned.
Transfer the seared roast to the slow cooker.
Add the minced garlic, sliced onion, carrots, potatoes, and celery around the roast in the slow cooker.
Pour the beef broth and Worcestershire sauce over the roast and vegetables.
Place the rosemary and thyme sprigs on top of the roast.
Cover the slow cooker with its lid and cook on low heat for 8 hours.
After cooking, remove the rosemary and thyme sprigs before serving.
Slice the roast beef against the grain and serve with the cooked vegetables and pan juices.
