Air Fryer Jalapeño Popper Chicken Breast

A delicious and easy-to-make Air Fryer Jalapeño Popper Chicken Breast featuring juicy chicken breasts stuffed with a creamy jalapeño and cheese filling, coated with crispy breadcrumbs, and cooked to perfection in the air fryer.

4 boneless, skinless chicken breasts (about 6 ounces each)
4 ounces cream cheese, softened
1/2 cup shredded sharp cheddar cheese
2 jalapeño peppers, seeded and finely chopped
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup all-purpose flour
2 large eggs
1 cup panko breadcrumbs

Instructions

Preheat the air fryer to 375°F (190°C).
Using a sharp knife, carefully cut a pocket horizontally into each chicken breast without cutting all the way through.
In a medium bowl, combine the softened cream cheese, shredded cheddar cheese, chopped jalapeños, garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix until well combined.
Stuff each chicken breast pocket evenly with the jalapeño cheese mixture.
Place the flour in a shallow bowl.
In a separate shallow bowl, beat the eggs.
Place the panko breadcrumbs in a third shallow bowl.
Dredge each stuffed chicken breast first in the flour, shaking off excess, then dip into the beaten eggs, and finally coat evenly with the panko breadcrumbs.
Lightly spray both sides of each breaded chicken breast with cooking spray.
Place the chicken breasts in the air fryer basket in a single layer, making sure they do not touch.
Air fry at 375°F (190°C) for 18 to 20 minutes, flipping halfway through, until the chicken is cooked through and the coating is golden brown and crispy. The internal temperature should reach 165°F (74°C).
Remove from the air fryer and let rest for 3 minutes before serving.
