High Protein Chicken and Zucchini Fritters

These high protein chicken and zucchini fritters are a delicious and healthy option for a quick meal. Packed with lean chicken breast and fresh zucchini, they are perfect for lunch or dinner and easy to prepare.

1 pound ground chicken breast
2 medium zucchinis, grated and excess moisture squeezed out
2 large eggs
1/4 cup grated Parmesan cheese
1/4 cup finely chopped green onions
2 cloves garlic, minced
1/4 cup almond flour
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon paprika
2 tablespoons olive oil

Instructions

In a large bowl, combine the ground chicken breast, grated zucchini, eggs, Parmesan cheese, green onions, and minced garlic.
Add the almond flour, salt, black pepper, and paprika to the mixture. Stir well until all ingredients are evenly combined.
Heat 1 tablespoon of olive oil in a large non-stick skillet over medium heat.
Scoop about 1/4 cup of the mixture and shape it into a patty. Place the patty in the skillet. Repeat with the remaining mixture, cooking in batches if necessary.
Cook the fritters for 4-5 minutes on each side, or until they are golden brown and cooked through.
Add the remaining 1 tablespoon of olive oil to the skillet as needed between batches.
Transfer cooked fritters to a plate lined with paper towels to drain any excess oil.
Serve warm with your choice of dipping sauce or a side salad.
