Air Fryer Potato and Eggs

A simple and delicious breakfast recipe featuring crispy air fryer potatoes paired with perfectly cooked eggs. Ready in under 30 minutes, this dish is perfect for a quick and satisfying meal.

2 medium russet potatoes, peeled and diced into 1/2-inch cubes
1 tablespoon olive oil
1/2 teaspoon garlic powder
1/2 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
4 large eggs

Instructions

Preheat the air fryer to 400°F (200°C) for 5 minutes.
In a large bowl, toss the diced potatoes with olive oil, garlic powder, smoked paprika, salt, and black pepper until evenly coated.
Place the seasoned potatoes in the air fryer basket in a single layer. Cook at 400°F (200°C) for 12 minutes, shaking the basket halfway through cooking to ensure even crisping.
While the potatoes are cooking, spray four small, heatproof ramekins or silicone muffin cups with cooking spray.
After the potatoes have cooked for 12 minutes, carefully remove the basket and create four small wells among the potatoes.
Crack one egg into each well or ramekin placed in the air fryer basket.
Return the basket to the air fryer and cook at 350°F (175°C) for 5 minutes, or until the egg whites are set and yolks reach your desired doneness.
Carefully remove the potatoes and eggs from the air fryer. Serve immediately.
