Keto Beef Short Ribs Crock Pot

3 pounds beef short ribs
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon olive oil
1 medium yellow onion, sliced
4 cloves garlic, minced
1 cup beef broth
1/4 cup soy sauce (or coconut aminos for strict keto)
2 tablespoons apple cider vinegar
1 tablespoon Worcestershire sauce
1 teaspoon smoked paprika
1/2 teaspoon dried thyme
1/2 teaspoon dried rosemary
1/4 teaspoon red pepper flakes

Instructions

Season the beef short ribs evenly with salt and black pepper on all sides.
Heat the olive oil in a large skillet over medium-high heat.
Add the short ribs to the skillet and brown on all sides, about 3-4 minutes per side. Transfer browned ribs to the crock pot.
In the same skillet, add the sliced onion and minced garlic. Sauté for 2-3 minutes until fragrant and slightly softened.
Pour in the beef broth, soy sauce, apple cider vinegar, and Worcestershire sauce. Stir in smoked paprika, dried thyme, dried rosemary, and red pepper flakes. Bring the mixture to a simmer.
Pour the sauce mixture over the short ribs in the crock pot.
Cover and cook on low for 6 hours until the meat is tender and falling off the bone.
Remove the short ribs from the crock pot and let rest for 5 minutes before serving. Spoon some of the cooking liquid over the ribs as a sauce.
