A tender and flavorful beef loin tri tip roast slow-cooked in a crock pot, perfect for an easy and hearty meal.
2 pounds beef loin tri tip roast
1 teaspoon kosher salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
1 tablespoon olive oil
1 cup beef broth
1 medium onion, sliced
3 cloves garlic, minced
2 sprigs fresh rosemary
2 sprigs fresh thyme
Pat the beef loin tri tip roast dry with paper towels.
In a small bowl, mix together kosher salt, black pepper, garlic powder, onion powder, and smoked paprika.
Rub the spice mixture evenly all over the tri tip roast.
Heat olive oil in a large skillet over medium-high heat.
Sear the tri tip roast on all sides until browned, about 3 minutes per side.
Place the sliced onion and minced garlic in the bottom of the crock pot.
Put the seared tri tip roast on top of the onions and garlic.
Pour beef broth around the roast in the crock pot.
Add fresh rosemary and thyme sprigs on top of the roast.
Cover and cook on low for 6 hours, or until the roast is tender and reaches an internal temperature of 135°F for medium-rare or 145°F for medium.
Remove the roast from the crock pot and let it rest for 10 minutes before slicing against the grain.
Serve with the cooked onions and pan juices from the crock pot.
