Ingredients

Scale

1 tablespoon olive oil
12 ounces Italian sausage, casings removed
1 medium yellow onion, finely chopped
3 cloves garlic, minced
1 can (14.5 ounces) diced tomatoes, undrained
4 cups low-sodium chicken broth
8 ounces dry penne pasta
2 cups fresh spinach, roughly chopped
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/4 teaspoon crushed red pepper flakes
Salt, to taste
Freshly ground black pepper, to taste
1/4 cup grated Parmesan cheese, for serving

Instructions

Heat the olive oil in a large deep skillet or Dutch oven over medium heat.
Add the Italian sausage, breaking it up with a spoon, and cook until browned and cooked through, about 5 to 7 minutes.
Add the chopped onion and cook until softened, about 3 minutes.
Stir in the minced garlic and cook for 1 minute until fragrant.
Add the diced tomatoes with their juice, chicken broth, penne pasta, dried oregano, dried basil, crushed red pepper flakes, salt, and black pepper.
Bring the mixture to a boil over high heat, then reduce the heat to medium-low and simmer, uncovered, stirring occasionally to prevent sticking.
Cook until the pasta is tender and most of the liquid is absorbed, about 12 to 15 minutes.
Stir in the chopped spinach and cook until wilted, about 2 minutes.
Taste and adjust seasoning with additional salt and pepper if needed.
Serve the pasta hot, sprinkled with grated Parmesan cheese.
