A simple and healthy slow cooker recipe featuring tender chicken breasts cooked with fresh zucchini and flavorful seasonings. Perfect for an easy weeknight dinner.
4 boneless, skinless chicken breasts
2 medium zucchinis, sliced into 1/2-inch rounds
1 medium onion, thinly sliced
3 cloves garlic, minced
1 cup low sodium chicken broth
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil
1/2 cup grated Parmesan cheese
Place the chicken breasts in the bottom of the slow cooker.
Add the sliced onion and minced garlic evenly over the chicken.
Arrange the sliced zucchini on top of the onions and garlic.
In a small bowl, mix the chicken broth, dried oregano, dried basil, salt, and black pepper.
Pour the broth mixture evenly over the ingredients in the slow cooker.
Drizzle the olive oil over the top.
Cover and cook on low for 4 to 4 1/2 hours, until the chicken is cooked through and tender.
About 15 minutes before serving, sprinkle the grated Parmesan cheese over the top and cover again to let it melt.
Serve the chicken breasts with the cooked zucchini and onions spooned over the top.
