2 cups red seedless grapes
1 tablespoon olive oil
1/4 teaspoon salt
8 ounces feta cheese, crumbled
4 ounces cream cheese, softened
1/4 cup plain Greek yogurt
1 tablespoon fresh lemon juice
1 small garlic clove, minced
1/4 teaspoon black pepper
1 tablespoon extra virgin olive oil, plus more for drizzling
1 tablespoon fresh thyme leaves, chopped
Crusty bread or crackers, for serving

Instructions

Preheat the oven to 400°F (200°C).
Place the red grapes on a baking sheet. Drizzle with 1 tablespoon olive oil and sprinkle with 1/4 teaspoon salt. Toss to coat evenly.
Roast the grapes in the preheated oven for 15 to 20 minutes, stirring halfway through, until the grapes are soft and slightly caramelized. Remove from oven and let cool slightly.
In a food processor, combine the crumbled feta cheese, softened cream cheese, Greek yogurt, lemon juice, minced garlic, black pepper, and 1 tablespoon extra virgin olive oil.
Process until the mixture is smooth and creamy, scraping down the sides as needed.
Transfer the whipped feta dip to a serving bowl.
Top the dip with the roasted grapes and sprinkle with chopped fresh thyme leaves.
Drizzle a little extra virgin olive oil over the top for added richness.
Serve immediately with crusty bread or crackers.
