2 cups red seedless grapes
1 tablespoon olive oil
1/4 teaspoon salt
1/4 teaspoon black pepper
8 ounces feta cheese, crumbled
4 ounces cream cheese, softened
1/4 cup plain Greek yogurt
1 tablespoon fresh lemon juice
1 garlic clove, minced
1 tablespoon extra virgin olive oil, plus more for drizzling
1 tablespoon fresh thyme leaves, chopped
Freshly ground black pepper, to taste
Toasted pita chips or sliced baguette, for serving

Instructions

Preheat the oven to 400°F (200°C).
Place the grapes on a baking sheet and drizzle with 1 tablespoon olive oil. Sprinkle with 1/4 teaspoon salt and 1/4 teaspoon black pepper. Toss to coat evenly.
Roast the grapes in the preheated oven for 15 to 20 minutes, until they are soft and slightly caramelized. Remove from oven and let cool.
In a food processor, combine the crumbled feta cheese, softened cream cheese, Greek yogurt, lemon juice, minced garlic, and 1 tablespoon extra virgin olive oil.
Process the mixture until smooth and creamy, scraping down the sides as needed.
Transfer the whipped feta dip to a serving bowl. Stir in the chopped fresh thyme leaves and season with freshly ground black pepper to taste.
Top the dip with the roasted grapes and drizzle with a little extra virgin olive oil.
