2 tablespoons olive oil
1 medium yellow onion, finely chopped
2 medium carrots, peeled and diced
2 celery stalks, diced
3 garlic cloves, minced
8 cups low-sodium chicken broth
2 cups cooked chicken breast, shredded
1 1/2 cups egg noodles
1/2 teaspoon dried thyme
1/2 teaspoon dried parsley
1/4 teaspoon salt
1/4 teaspoon black pepper
1 bay leaf

Instructions

Heat olive oil in a large pot over medium heat.
Add chopped onion, diced carrots, and diced celery to the pot. Cook for 5-7 minutes, stirring occasionally, until vegetables are softened.
Add minced garlic and cook for 1 minute until fragrant.
Pour in the chicken broth and add the bay leaf, dried thyme, dried parsley, salt, and black pepper.
Bring the soup to a boil, then reduce heat to low and let it simmer for 15 minutes.
Add the egg noodles to the pot and cook for 7-8 minutes until noodles are tender.
Stir in the shredded cooked chicken and heat through for 2-3 minutes.
Remove the bay leaf before serving.
Ladle the soup into bowls and serve warm.
