2 medium apples, peeled, cored, and diced
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
1/2 cup granulated sugar
1/4 cup packed light brown sugar
1 large egg
1 cup plain yogurt (preferably whole milk yogurt)
1/3 cup vegetable oil
1 teaspoon vanilla extract

Instructions

Preheat the oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.
In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt until well combined.
In a large bowl, beat the granulated sugar, brown sugar, and egg until creamy and smooth.
Add the yogurt, vegetable oil, and vanilla extract to the sugar mixture and mix until fully incorporated.
Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Do not overmix.
Fold the diced apples into the batter evenly.
Pour the batter into the prepared cake pan and spread it out evenly.
Bake for 40 to 45 minutes, or until a toothpick inserted into the center comes out clean.
Remove the cake from the oven and allow it to cool in the pan for 10 minutes.
Transfer the cake to a wire rack to cool completely before serving.
