2 medium zucchinis, grated
1 teaspoon salt
1/2 cup crumbled feta cheese
1/4 cup finely chopped fresh dill
2 large eggs
1/2 cup all-purpose flour
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
3 tablespoons olive oil, for frying

Instructions

Place the grated zucchini in a large bowl and sprinkle with salt. Let it sit for 10 minutes to draw out excess moisture.
After 10 minutes, use a clean kitchen towel or cheesecloth to squeeze out as much liquid as possible from the zucchini. Transfer the drained zucchini back to the bowl.
Add the crumbled feta cheese, chopped fresh dill, eggs, flour, black pepper, and garlic powder to the zucchini. Mix well until all ingredients are fully combined.
Heat 1 tablespoon of olive oil in a large non-stick skillet over medium heat.
Scoop about 2 tablespoons of the zucchini mixture and form into small patties. Place them in the skillet, making sure not to overcrowd the pan.
Cook the fritters for 3 to 4 minutes on each side, or until golden brown and crispy.
Add more olive oil to the skillet as needed and continue cooking the remaining fritters in batches.
Transfer the cooked fritters to a paper towel-lined plate to drain any excess oil.
Serve warm with your favorite dipping sauce or a dollop of Greek yogurt.
